  3. Add chopped garlic and ginger. Sauté for a minute
  4. Add chopped onions and sauté till pink
  5. Add the dry masalas and stir to avoid burning. Add chopped tomato and green chilli.
  6. Sauté till tomato turn slightly soft and then add cubes of potato and brinjal. Stir nicely and then cover the wok with a lid. Let it cool on low flame till it’s done.
  7. Sprinkle amchoor powder and mix well. Enjoy hot aloo baingan sabzi with roti or parantha
